This summer has been a HOT one here in Cali. This means that we have been spending plenty of days at the beach and pool, so I am always trying to stay “bathing suit ready”. Being healthy and in shape is important to me for many reasons but my children are number ONE! Keeping up with a four and six year-old actually makes me feel younger when I am on point and  encouraging them to stay active and eat healthy is always a top priority. These past few years, I have not only changed my outlook on life, but I have also changed many of my habits by living a healthier lifestyle. One way I can encourage Kolton and Shayne to eat healthier is by providing them with healthy options that they will actually like! As a huge fan of StarKist®, I was delighted to be invited to an event featuring the StarKist Selects E.V.O.O.® Pouches! Not only did I meet some amazing, like-minded bloggers, but I was introduced to some delicious recipes that I can make at home.

Now that StarKist Selects E.V.O.O.® has some delicious pouches that are packed in cold-pressed extra virgin olive oil, our tuna and salmon game has stepped up a notch! The three pouches we sampled are all wild-caught and are natural sources of Omega 3s! And, the recipes we tried have just a few simple ingredients that even this busy Mama can handle!

Here are some of my favorite new recipes that all tuna and salmon lovers MUST try:

1.    Artichoke and Tuna Crostini with StarKist Selects E.V.O.O.® Yellowfin Tuna:

2.    Puffed Feta and Tuna Bites with StarKist Selects E.V.O.O.® Yellowfin Tuna:

3.    Salmon Power Bowl with StarKist Selects E.V.O.O.®Wild-Caught Pink Salmon:

4.    Fresh Tuna Salad on Crostini with StarKist Selects E.V.O.O.® Yellowfin Tuna with Sun-dried Tomato:

After showing my husband (a HUGE tuna lover) these easy-to-make recipes, I am now on the hook to make them at home, which is a good thing. My personal favorite is the Artichoke and Tuna Crostini, but I am also looking forward to experimenting with new recipes including an open-faced tuna melt made with the StarKist Selects E.V.O.O.® Yellowfin Tuna with Sun-Dried Tomato over a green salad (yum)!

What are your favorite tuna recipes? Please give me more ideas to try in the comments below!
